With new and unique delicacies announced each year, this isn’t your grandpa’s fair food on a stick.

This Carribean-fusion dish will make you feel like you’re on an island, featuring ahi tuna, avocado, mango and pico de gallo tossed in a Hawaiian ginger-soy sauce served cold over rice with a fried wonton.

Bananas Foster French Toast: Hamline Church Dining Hall

For those breakfast lovers with a sweet tooth, choose the Bananas Foster French Toast. This cinnamon swirl French toast topped with slices of fresh bananas in an orange-rum-flavored caramel sauce and finished with a dollop of whipped cream is the ultimate State Fair breakfast.

Looking for a true American dish? Pick up a BBQ Split, with hefty scoops of BBQ pulled pork, mac and cheese and coleslaw served side-by-side with a pickle spear.

Blueberry Rhubarb Cobbler: Farmers Union Coffee Shop

If you’re headed to the State Fair to indulge (and we suggest you do), then check out the Blueberry Rhubarb Cobbler, a blend of organic blueberries and rhubarb topped with a cornmeal biscuit and whipped cream.

Earth Wings: French Meadow Bakery & Café

For a deep-fried delight, try out Earth Wings from French Meadow Bakery & Café. This vegan/gluten-free dish has fresh cauliflower pieces dipped in a seasoned batter, deep-fried and smothered in organic sesame BBQ sauce.

Firecracker Shrimp Stuffed Avocado: Hideaway Speakeasy

Seafood lovers rejoice! If you’re craving shrimp, the Hideaway Speakeasy has created this dish for you. Gulf white shrimp is tossed with lime, onion, black beans, tomato and fire-roasted corn in a garlic aioli, drizzled with cilantro-infused olive oil, stuffed in avocado halves and served open-face with flatbread.

General Tso Chicken Taco: Taco Cat

Taco Cat has quickly become a local favorite with their delicious Mexican fare. This dish is no different. General Tso Chicken Taco features battered and deep-fried chicken tossed in a sauce of ginger, garlic, soy sauce and Asian spices, with seasoned cream cheese and topped with wonton crisps and green onion, served on a flour tortilla.

Honey Cream Soda Float: Minnesota Honey Producers

This ice cream treat comes from Minnesota Honey Producers, so you know it will be delicious. With honey cream soda (made without sugar) poured over Minnesota Grown honey ice cream, you’re likely to drink it down before you know it!

Irish Tater Kegs: O’Gara’s at the Fair

For those in search of mouth-watering Irish fare, O’Gara’s has created these Irish Tater Kegs – jumbo deep-fried tater tots made with a blend of corned beef, sauerkraut, Swiss cheese, sour cream and potatoes drizzled with house-made Thousand Island dressing and nestled on a bed of sauerkraut.

Mangonada Shave Ice: MinneSnowii Shave Ice

To beat the heat, check out this sweet treat from MinneSnowii Shave Ice. With mango-flavored shave ice drizzled with Mexican chamoy sauce, dusted with Tajin chili powder, topped with popping mango boba pearls and served with a tamarind candy straw, it’s the best way to cool down on a hot summer day.

Italian with an American twist? Sign us up! The Messy Giuseppe is a blend of seasoned ground beef and Italian pork sausage smothered in marinara, sprinkled with parmesan cheese and served on crusty Italian bread.

Moroccan Sausage Bowl: Sausage by Cynthia

With a stellar mix of ingredients, The Moroccan Sausage Bowl features coarse ground beef and lamb sausage seasoned with herbs, sweet spices and a hint of red pepper, cooked with carrots, turnips and chickpeas, and topped with sautéed onions and a green olive.

Nordic Waffles: Nordic Waffles

Nordic Waffles is going big this year at the Minnesota State Fair, with seven varieties of their fresh-made waffle wraps. All-Day Breakfast with egg, bacon and cheddar; Berries and Cream with raspberry/strawberry mixture and vanilla cream; Cinna-Sugar Butter with cinnamon, sugar and butter; Slammin’ Salmon On-A-Stick, with Norwegian-smoked salmon, cream cheese and green onions; S’More with marshmallow crème, crumbled graham crackers and Nutella; Turkey Chipotle Club with turkey, bacon and mixed greens with Sriracha mayo sauce; and Vegetarian Viking with black bean veggie burger, cheddar cheese, mixed greens and chipotle sauce.

Pepperoni Chips with Roasted Red Pepper Queso: LuLu’s

These Pepperoni Chips with Roasted Red Pepper Queso from LuLu’s Public House feature thinly sliced fried pepperoni chips served with a warm roasted red pepper cheese sauce. Simple, delicious perfection!

Rainbow Cloud Roll: Rainbow Ice Cream

Another new ice cream treat to hit the State Fair this year is the Rainbow Cloud Roll. Indulge in three scoops of ice cream sprinkled with fruity cereal and wrapped in a pillow of cotton candy. The ice cream comes in four flavors and is hand-rolled on-site, so you know it’s fresh.

Shrimp Ceviche: Shrimp Shack

The shrimp shack is serving up this simple, yet delightful dish at this year’s State Fair. This Shrimp Ceviche features fresh shrimp, cucumbers, jalapeños, onions, tomatoes and cilantro tossed with a citrus lime juice and served cold with tortilla chips.

Slider Flights: The Hangar

You’ve heard of beer flights – but burger flights? Only at the Minnesota State Fair! Check out these sliders from The Hangar, available in three varieties: Brisket Flight, Burger Flight and Pulled Pork Flight.

Smoked Soft Serve Ice Cream: Blue Moon Dine-In Theater

This unique ice cream treat features cold-smoked cream, and is available in two flavors, all made on-site: Cold Brew Coffee infused with cold-smoked Arabica beans and topped with chocolate espresso dust, a toasted marshmallow and a chocolate cookie on the side; and Muscovado Sugar Vanilla, which combines vanilla bean and cold-smoked molasses-rich cane sugar, served with a toasted marshmallow and bacon candy round on the side.

Swedish Meatball Smorgas: The Blue Barn

The Swedish Meatball Smorgas from The Blue Barn will leave you wanting another one. This hefty meatball sandwich contains three traditional Swedish pork and beef meatballs topped with white gravy, lingonberry sauce and dill pickles.

Sweet Greek Cheese Puffs: Dino’s Gyros

You won’t be able to get enough of these puffy cheese puffs, featuring flaky phyllo dough filled with feta and ricotta cheese, deep-fried, drizzled with honey and topped with powdered sugar.

Sweetie Cakes: Sweetie Cakes

Sweetie Cakes will have you swooning for more as soon as you take your first bite. With a choice of black forest cake, birthday cake or chocolate peanut butter cake, baked in a cup packed with Sassy Pecan toffee bits and served warm, topped with real whipping cream and more toffee bits.

UpNorth Puff Pastry: Sausage Sister & Me

For a taste of up North, check out this pastry dish from Sausage Sister & Me. With porketta sausage, cheese curds, coarse grain mustard and chopped dill pickle baked in a puffy crust sprinkled with pepper and sea salt, you’ll feel like you’re on the shores of Lake Superior.

Wood Grilled Elote: Tejas Express

A fantastic blend of flavors comes from Tejas Express and their Wood Grilled Elote dish. Featuring corn-on-the-cob grilled over an oak wood fire, brushed with chile-spiced mayo and sprinkled with queso Cotija and fresh lime juice.

Za-Waffle Sticks: Green Mill

Is it a breadstick? Is it pizza? Is it a waffle? It’s a little bit of each! This year, Green Mill is offering up these waffles blended with pepperoni and mozzarella, topped with a parmesan herb blend and served with pepperoni-infused maple syrup or marinara sauce.

Zesty PB&J Sausage: Gass Station Grill

For those looking for a truly unique dish at this year’s Minnesota State Fair, head to the Food Building for a Zesty PB&J Sausage from the Gass Station Grill. With peanut butter, cherry jelly, a hint of cayenne pepper and cilantro blended into a quarter-pound sausage, your taste buds have never experienced such a flavorful combination.
