Freezer Sweet Corn

Ingredients

  • 4 quarts fresh corn (cut from about 20 ears)
  • 1 quart hot water
  • 2/3 cup sugar
  • 1/2 cup butter, cubed
  • 2 teaspoons salt

 

Directions

In a stockpot, combine all ingredients; bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes, stirring occasionally. Transfer to large shallow containers to cool quickly, stirring occasionally. Freeze in resealable plastic freezer bags or freezer containers, allowing headspace for expansion.

Marinated Tomatoes

Ingredients

  • 2 pounds assorted tomatoes, roughly chopped
  • 1 small shallot, minced
  • 3 garlic cloves, crushed
  • 1/2 cup red wine vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup loosely packed fresh basil leaves
  • 1/4 cup loosely packed Italian parsley leaves

 

Directions

Gently stir together tomatoes, minced shallot, crushed garlic, vinegar, olive oil, salt, and pepper, and set aside for 1 hour and 45 minutes, tossing occasionally. Stir in basil leaves and Italian parsley leaves. Serve immediately.

Miso-Sesame Pesto

Ingredients

  • 1/3 cup unsalted dry-roasted peanuts
  • 3 medium garlic cloves
  • 3 ounces fresh basil, large stems removed (2 packed cups)
  • 1/4 cup canola oil
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons white miso
  • 1 tablespoon rice vinegar
  • 2 teaspoons fish sauce
  • 1/2 teaspoon crushed red pepper

 

Directions

Pulse peanuts and garlic in a food processor until finely chopped, 4 to 5 times. Add basil; pulse until finely chopped, 4 to 5 times. Add oils, miso, vinegar, fish sauce, and red pepper; process until almost smooth. Store in an airtight container in refrigerator up to 1 week, or freeze up to 2 months.
